This quick and easy enchilada casserole has become one of our favorite, “throw it all together in a dish”, gluten free meals. It even beats out lasagna in our house and is easier to make. For anyone who is gluten free, these bagels will more than satisfy that bagel craving! Full of fiber, they make a great breakfast without all the guilt. So easy to mix up and bake! How much fun is breakfast out at Disney World! But let’s face the truth: Eating breakfast as a gluten free diner (plus additional allergies) at a restaurant is often not worth it. Many breakfast foods, ie. pancakes, waffles, toast, can be substituted with gluten free options that are cardboard tasting, grainy, and just plain unsatisfying.
