Dutch Oven Beef Stew – Easy Gluten Free Comfort Food

Cool weather is here, the sun is going down earlier. It is time for all of the stews and soups that you have been waiting for. The ultimate satisfying comfort food! Savory, saucy, beef stew is slow cooked, so it melts in your mouth. 

This recipe easily converts to gluten free. Worcestershire sauce is normally gluten free, but be sure to check labels as always. White rice flour or brown rice flour make great thickeners in slow cooking dishes. Almond or coconut flour are also options, but they can add a bit of their flavor to the final product which is not for everyone.

*Tip: No oven-approved dutch oven? You can also make it on a stove top in a large pot over low to medium heat. Be sure to check often as cooking time may be different.

Dutch Oven Beef Stew Gluten-Free Recipe

4-6 Servings

Preheat oven to 350°

1 ½ lbs chuck roast or round roast – 1 ½ “ chunks

1 tsp coarse sea salt

Pepper to taste

¼. White rice flour

1 large onion – chopped

1-2 T. red wine

2 T. cider vinegar

⅔ c. ketchup

¼ c. brown sugar

1 T. worcestershire sauce – gluten free

1 ¼ c. water

1 small bag baby carrots or 4 carrots peeled, 1” slices

4-5 medium potatoes – peeled and 1 ½ “ chunks

1. In a bowl, combine roast, salt, pepper and rice flour. Let sit for at least 15 minutes. 

2. In dutch oven, heat olive oil over medium to medium-high heat, add onion and saute until onions start to become transparent. 

3. Add the beef mixture. Brown all sides of chunks. 

4. Add red wine to deglaze the pan. Don’t worry if all of it doesn’t come off, it will cook off later. 

5. Next, add all ingredients except carrots and potatoes. Stir well, place the lid on the dutch oven and bake in the oven 350° for 30 minutes. 

6. Remove dutch oven and stir in carrots and potatoes. Return to the oven with the lid on for 45-60 minutes or until carrots and potatoes are soft and cooked through. 

Serve with crusty bread to soak up sauce.
