Full of fiber, they make a great breakfast without all the guilt.
So easy to mix up and bake!
No rising or water bath, but still all the great taste.
Use a strong flavored honey to add that “malt” flavor.
UPDATED RECIPE!!! Switched out white rice flour for a combo of almond and tapioca flours. This version has more air pockets and tastier; it still has that chewy, bagel-like texture. If you can’t do nut flours, you can substitute white rice flour or flour of your choice.
Easy Gluten Free Bagel Recipe
1 c. oat flour – gluten free
3/4 c. almond flour – super fine
1/2 c. tapioca flour
1 tsp psyllium husk
1/2 tsp. salt
1 tablespoon baking powder – gluten free (1 1/2 Tablespoons for fluffier bagel
1 tablespoon honey
1 egg
1 ½ c. plain greek yogurt
1-2 egg whites, beaten
1. In a large standing mixer bowl, add dry ingredients then turn mix on low to combine.
2. Add honey, egg, and yogurt, mix on low-medium just until a thick dough forms. Over
mixing will make oat flour tough and difficult to rise. If too runny add a few 2-3
tablespoons of oat flour to thicken
3. Moisten hands and coat with rice flour. Take a ball of dough (slightly smaller than a
Tennis ball). Roll onto a rice floured surface to form a 1” thick rope. Place “rope” in a
greased donut pan and press ends together. Continue until you have used up all the
dough. Makes approximately 6 bagels. Brush with egg white wash.
4. Bake at 350° (convection if possible) for 25-35 minutes or until they begin to turn golden brown. Remove from
oven and let cool until you can touch the pan. Then gently place on a rack or towel to
continue cooling. When completely cool, slice bagels in half and freeze in storage bags.
5. To serve, remove from the freezer and toast and toppings to your liking!
Options to Customize:
Cinnamon Raisin Bagel – Before shaping bagels, stir in ½ tsp of cinnamon and 1/2 c. of raisins
Everything Bagel – After brushing on egg wash, sprinkle with Everything Bagel Seasoning
