Looking for a quick, easy, budget friendly, gluten free dinner? This version of gluten free Spanish Rice is one of our favorites for a busy weeknight. Serve alone or with a side salad or garlic bread. Using ground turkey instead of ground beef is lower in fat, but that depends on your taste buds and dietary concerns. Be sure to check that all your ingredients are gluten free.
Spanish Rice – Gluten Free
2 tablespoons olive oil
1 large onion, chopped
1 lb ground turkey (or ground beef)
1 tablespoon ground sage
2 tsp celtic sea salt
½ tsp fresh ground pepper
7 garlic cloves, minced
3 14.5 oz cans diced tomatoes
1 tablespoons chile powder (more if desired)
1 tablespoon dried basil
1 tablespoon dried parsley
1 tablespoon dried oregano
2 tsp sugar
1 ½ cup basmati rice
3 cups water
Fresh parsley
Fresh grated parmesan or asiago
- In Dutch oven, heat olive oil. Add onions, sauteeing until translucent.
- Push onions to the perimeter of the pan, add ground turkey to center of pan. Break up ground turkey, sprinkle salt, pepper, and sage and continue to saute and break up turkey until fully cooked and beginning to brown.
- Then add minced garlic to the turkey mixture and stir in.
- Stir in tomatoes and break up. Then stir in oregano, basil, parsley, and sugar.
- Place rice on top of the turkey mixture. Do not stir. Gently pour water over rice. Bring to a simmer for 5 minutes.
- Cover, be sure the lid is sealed and bake in the oven at 400° for 20 minutes or until rice is cooked.
- Serve with hot sauce, grated cheese, and fresh parsley.
